Foodworks (Food Facts, and Fads) is an eclectic collection of topics about how our health, environment and culture are affected by the foods we choose. Some topics may be controversial but supported by evidence and research. I am a recently semi- retired college professor who taught diet and nutrition classes as well as courses in biology and microbiology. I graduated from Miami University (Ohio) and have a PhD degree in nutrition science and a Master’s degree in biology with an emphasis in Microbiology from Texas Womans’ University. I am also a registered dietitian (RD).
I still teach online graduate courses to students who are registered dietitians or currently studying to be registered dietitians or anyone who is pursuing a Master’s Degree in Health Sciences.
I live in Western North Carolina in a small town just north of Asheville called Weaverville and love the area for its diversity and wonderful mountains. I have worked as a clinical dietitian in Washington, DC, and Hartford, CT. Later I was a teaching assistant at Marquette University Dental School in the department of Immunology and Microbiology. After that I began teaching nutrition and biology courses at Western Carolina University for 15 years.
My particular interests (at the present time) include:
- Healthy foods and diets (what the science says)
- Safety of the American food supply
- The history of food and how it affects us today
- Why we have an obesity and diabetic epidemic.
- How food production affects our health and environment
- What is wrong with the American diet?
- Animal welfare and food productionI hope to share some contemporary issues with you concerning how the world eats.

I just found your blog by trying to do a little “web research” on “just label it”… the organization that is trying to get Americans to sign their petition, re: labeling foods with GM ingredients. I’m definitely going to be following you!
