It has long been rumored that red and processed meat may increase colon cancer. Still, the evidence is not conclusive but the recent statement from the World Health Organization supports the rumor by saying that processed meat is carcinogenic and red meat “probably” is carcinogenic.
The headlines blared “Bacon is Back” when studies reported that there was no significant association between saturated fat and the risk of coronary heart disease. Now the topic has switched to cancer risks, namely colon, prostate and pancreatic cancers. The increased risk appears small – and appears to be related to the amount consumed, so bacon is once again the “bad boy” along with sausage, deli-meat and hot dogs.
